Sauteed Cabbage with Apples, Onions and Leek
(can be a side OR main dish)
Ingredients:
Olive oil
1 garlic clove, thinly sliced
1 medium red onion, very thinly sliced
1 leek, thinly sliced
1 medium green cabbage, quartered, cored, and very thinly sliced
1 large crisp, sweet apple
Salt
Pepper
In a large saute pan or dutch oven, heat some olive oil with onion and garlic until the onion starts to turn slightly translucent (but not brown!). Add the apples and leeks and continue cooking for about 1-2 minutes, or until sizzling. Add about 1/4 cup water, cabbage, salt and pepper. Stir over high heat just long enough to barely soften and cook the cabbage. It should retain a little crunch but lose the raw flavor of uncooked cabbage... Turn off the heat and enjoy!
Serves 6-8 and can be eaten warm or at room temperature.
